Classic Adobo

Adobo is known for its savory, tangy, and slightly sweet flavor profile. It is often served with steamed rice and is a comforting and satisfying dish enjoyed by many.


Ingredients​

  • 1 kg  Mrs. Garcia's Pork Adobo Cut1 pc ​ ​ ​​Onion (thinly sliced)
  • 1 head ​ ​ ​Garlic (minced)
  • 2 pcs ​  ​​Bay Leaves
  • 1 tbsp ​ ​ ​Brown Sugar (optional)
  • 1/2 Black Pepper
  • 1 tbsp​ ​ ​​Oil
  • 1 cup​ ​ ​Vinegar
  • 1/2 cup​  ​​Soy Sauce
  • 1 tbsp ​ ​ ​Salt

Preparation

  1. In a bowl combine pork, soy sauce, onions, garlic, bay leaves, salt, and pepper. Marinate for at least 30 minutes inside of refrigerator.

  2. In a large pan or pot, heat cooking oil over medium-high heat. Add marinated pork ​pieces then sear until all sides are browned.
  3. Pour in the vinegar and water. The liquid should almost cover the pork.

  4. Bring mixture to a boil, then lower heat to a gentle simmer.

  5. Cover pan and let pork meat cook for about 40-50 minutes or until meat is tender and ​sauce is reduced.

  6. Season with salt and pepper to taste. You may also add brown sugar.

  7. Serve hot with rice and a side of vegetables or salad.
