1 kg Mrs. Garcia's Beef Ribs

5 cups​ ​ ​​Water

1 pc​ ​ ​White Onion (peeled)

5 cloves​ ​​Garlic (peeled)

2 pcs​ ​ ​Ginger (peeled)

1/4 tsp ​Fine Salt

4 cups Beef Stock

1/2 cup ​Soy Sauce

1/3 cup ​Brown Sugar

1 tbsp ​Sesame Oil

1 tbsp ​Sesame Seeds (toasted)

1/4 cup ​Onion (Sliced)

1.  In a large pot, put beef ribs together with garlic, whole onion, ginger, and salt. Add water and make sure all meat pieces are immersed in water. Bring to a boil then reduce to medium heat, then cook for 30 - 45 minutes, remove the scum on top.

​2.  Remove beef stock and reserve its braising liquid. Set aside garlic, onion, and ginger.

​3.  Return meat into the pot, then add ingredients for braising liquid - beef stock, soy sauce, and brown sugar. Cover and bring to a boil, then reduce to medium heat and cook beef for about 1 to 1.5 hours or until tender.

​4.  Taste sauce, add more sugar or fish sauce if necessary. Then add sesame oil, toasted sesame seeds, and sliced scallions. Serve hot with Korean bean sprouts, kimchi, and rice.
